Healthy Thanksgiving Recipes

Can you believe Thanksgiving is next week? I am the type of person who always leaves things to the last minute, like creating a Thanksgiving menu. This year, I was not only productive, but I thought I would share some of the healthy and delicious Fall-inspired meals I am preparing this Thanksgiving weekend.


Roasted Fall Veggies The summertime gets so much love for their produce, and rightfully so. But, Fall produce is out of this world (and maybe my favorite - over summertime's as well.) I love this Fall vegetable side dish, because it is quick, easy, delish, and uses Fall produce. Side note - I don't always add the pecans or cranberries, and it is still scrumptious. Stuffing

Stuffing is synonyms with Thanksgiving. I mean, is it really Thanksgiving without a big plate of warm stuffing? I don't think so. This recipe is one of my favorites, the use of all the herbs, and seasonings make it absolutely delicious. Also, it is made with gluten-free bread, another bonus for anyone that may have celiac disease. Feel free to switch to a non-gluten-free bread if you prefer. (Fell recipe here)





Pumpkin Pie Bites Pumpkin pie is a must for the Fall. Personally, I love pumpkin pie all year round, but the Fall makes it a little more socially acceptable to indulge. These pumpkin pie bites are a win in my book because there are: easy, delicious, and use whole ingredients that I can pronounce. That means whole foods like pumpkin puree (not the sweetened kind) and almond flour. These simple swaps make a delicious treat, that I don't mind indulging in during the holiday season.
